Dating of AST

We currently let a property with a 6 month AST from five years ago which has become periodic. We are giving our tenants a new 6 month AST (with an rental increase and some minor changes to terms) with a term to begin on 1 July. My question is, if we all sign the AST prior to this date should the actual date of the AST be (a) 1 July which is the actual start date of the rental term, or (b) the date we actually sign it, or (c) does it not really matter? Would be most grateful for any guidance. Thanks!
